Ingredients

For the Crust and Topping
  • 7 tablespoons Unsalted Butter Ensure it's softened to room temperature for optimal mixing.
  • 3/4 cup Brown Sugar Light or dark brown sugar can be used depending on preference.
  • 1 teaspoon Vanilla Extract Pure vanilla extract is recommended for best taste.
  • 1 cup All-Purpose Flour Measure by spooning and leveling for accuracy.
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Old-Fashioned or Quick Oats Avoid instant oats for best results.
For the Lemon Filling
  • 1 can Sweetened Condensed Milk Do not substitute with evaporated milk, as it will not yield the same texture.
  • 6 tablespoons Lemon Juice About 2 fresh lemons will yield this amount.
  • 1 tablespoon Lemon Zest Use a microplane for best results.

Equipment

  • 8-inch square baking pan
  • mixing bowl
  • spatula
  • whisk
  • Parchment paper

Method

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. In a mixing bowl, beat together 7 tablespoons of softened unsalted butter and 3/4 cup of brown sugar until light and fluffy, about 2 minutes. Blend in 1 teaspoon of vanilla extract, followed by 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/4 teaspoon of salt, and 1 cup of old-fashioned oats.
  3. Press more than half of the crumbly mixture firmly into the prepared baking pan to form an even layer.
  4. Bake it for about 12 minutes, until lightly golden, and then cool slightly.
  5. Whisk together 1 can of sweetened condensed milk, 6 tablespoons of lemon juice, and 1 tablespoon of lemon zest until smooth and well combined.
  6. Pour the lemon filling over the pre-baked crust, spread evenly, and sprinkle with the remaining crumble mixture.
  7. Bake for an additional 22–25 minutes, or until the top is golden brown and the filling is set.
  8. Let the bars cool completely on a wire rack, then slice into squares.
