Step-by-Step Instructions
  1. In a mixing bowl, combine olive oil, lemon juice, lemon zest, oregano, smoked paprika, salt, and pepper to create a marinade. Add the chicken, ensuring it's well-coated. Cover and marinate for at least 20 minutes.
  2. Heat a large pan over medium heat and drizzle in a little olive oil. Add the marinated chicken and diced onion, cooking for about 6-8 minutes until the chicken is browned and cooked through.
  3. Stir in minced garlic and sauté for about 1 minute until fragrant.
  4. Add the orzo, chicken broth, remaining oregano, olives, and roasted red peppers. Bring to a boil, then reduce to a simmer for about 8-10 minutes until the orzo is tender.
