Tzatziki Sauce Preparation
- In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, and lemon juice. Mix in fresh dill and season to taste with salt and pepper. Cover and refrigerate for at least 30 minutes.
Meatball Preparation
- In a large mixing bowl, combine ground chicken, chopped shallot, beaten egg, olive oil, and gluten-free breadcrumbs or almond flour. Add lemon zest, lemon juice, minced garlic, chopped parsley, dried oregano, basil, and onion powder. Season generously with salt and pepper.
- Shape the mixture into 1½-inch meatballs and place them on a parchment-lined baking sheet.
- Preheat your oven to 400°F (200°C).
- Bake meatballs for 20–22 minutes until golden brown and cooked through.
- For an extra crispy exterior, broil for an additional 2–3 minutes.
