Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken or ground turkey for lighter option
  • 1 Shallot finely chopped
  • 1 Egg beaten
  • 2 tbsp Olive Oil preferably extra virgin
  • 0.5 cup Gluten-Free Bread Crumbs or Almond Flour
  • 1 tbsp Lemon Zest for vibrant citrus kick
  • 1 tbsp Lemon Juice juice of half a lemon
  • 2 Garlic minced
  • 1 handful Fresh Parsley chopped
  • 2 tbsp Fresh Dill adjust to taste
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Onion Powder
  • to taste Salt and black pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt plain
  • 1 medium Cucumber grated and squeezed
  • 2 Garlic minced
  • 1 tbsp Lemon Juice fresh
  • 2 tbsp Olive Oil quality preferred
  • 2 tbsp Fresh Dill chopped
  • to taste Salt and Pepper

Method
 

Tzatziki Sauce Preparation
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, and lemon juice. Mix in fresh dill and season to taste with salt and pepper. Cover and refrigerate for at least 30 minutes.
Meatball Preparation
  1. In a large mixing bowl, combine ground chicken, chopped shallot, beaten egg, olive oil, and gluten-free breadcrumbs or almond flour. Add lemon zest, lemon juice, minced garlic, chopped parsley, dried oregano, basil, and onion powder. Season generously with salt and pepper.
  2. Shape the mixture into 1½-inch meatballs and place them on a parchment-lined baking sheet.
  3. Preheat your oven to 400°F (200°C).
  4. Bake meatballs for 20–22 minutes until golden brown and cooked through.
  5. For an extra crispy exterior, broil for an additional 2–3 minutes.
Serving
  1. Let the meatballs rest briefly, then serve with tzatziki sauce, garnished with fresh herbs and olive oil.
