Preparation Steps
  1. Wash and dry the cucumber and carrots thoroughly. Cut the cucumber into thin strips and julienne the carrots. Set aside in a large mixing bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, gochugaru, soy sauce, and sugar until well combined and smooth.
  3. Pour the dressing over the julienned vegetables and add minced garlic and chopped parsley. Toss well to coat everything.
  4. Sprinkle sesame seeds on top and toss again. Serve immediately or let sit at room temperature for 10-15 minutes to meld flavors.
