  • 1 teaspoon Dried Thyme Italian seasoning may replace it
  • 1 teaspoon Cayenne Pepper Adjust to taste
  • 1 teaspoon Black Pepper
  • 1 teaspoon White Pepper
  • 2 teaspoon Salt Kosher salt recommended
For the Ranch Dressing
  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream Greek yogurt as alternative
  • 1/2 cup Buttermilk Regular milk can be used
  • 1 tablespoon Dried Parsley Fresh herbs work too
  • 1 tablespoon Dried Dill Fresh herbs work too
  • 1 tablespoon Dried Chives Fresh herbs work too
For the Cheese Sauce
  • 1 cup Cheddar Cheese Gouda or pepper jack optional
  • 1 cup Monterey Jack Adapt to preference

Method
 

Step-by-Step Instructions
  1. Soak the fries in a large bowl of cold water and cornstarch for 30 minutes to 2 hours.
  2. Heat oil to 325°F (160°C) and fry the fries in batches for 5-7 minutes until soft but pale.
  3. Let the fries cool completely for about 30 minutes.
  4. Increase the oil temperature to 375°F (190°C) and fry the fries again for 2-3 minutes until golden brown.
  5. Immediately season fries with salt after frying.
  6. Mix paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, white pepper, and salt in a bowl.
  7. Whisk together mayonnaise, sour cream, buttermilk, and dried herbs to make ranch dressing; refrigerate for 30 minutes.
  8. In a saucepan, make a roux with butter and flour; add milk, cheese until melted and creamy for cheese sauce.
  9. Combine ranch dressing, cheese sauce, and Cajun seasoning in a bowl.
  10. Serve fries topped with Voodoo sauce and additional seasoning or herbs as desired.
