Step-by-Step Instructions
  1. Place the boneless, skinless chicken thighs in the slow cooker in an even layer.
  2. In a medium mixing bowl, combine low-sodium soy sauce, honey, ketchup, minced garlic, apple cider vinegar, and fresh ginger. Whisk until well blended.
  3. Pour the sauce over the chicken thighs in the slow cooker, ensuring each piece is coated.
  4. Cover the slow cooker and set it to high for about 3.5 hours, or on low for 6 to 8 hours.
  5. Mix cornstarch with an equal amount of cold water. Add this to the slow cooker and stir well. Cook on high for an additional 15 minutes.
  6. Shred the chicken or serve the thighs whole. Ladle thickened honey garlic sauce over the chicken.
