For the Garlic Herb Butter
  • ½ cup Unsalted Butter at room temperature
  • 2 tablespoons Fresh Parsley chopped
  • 3 cloves Garlic pressed
  • 1 piece Lemon Zest zest of 1 lemon
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Dried Basil
  • ½ teaspoon Smoked Paprika optional
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Ground Black Pepper
  • pinch Cayenne Pepper to taste

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C).
  2. In a medium bowl, combine the room temperature unsalted butter, chopped parsley, pressed garlic, lemon zest, dried thyme, rosemary, basil, kosher salt, black pepper, and cayenne pepper. Mix until fully blended.
  3. Place the unhusked corn directly on the oven rack or on a baking sheet. Roast for 35–40 minutes, turning halfway through.
  4. Carefully remove the corn from the oven and peel back the husks to expose the kernels. Slather with garlic herb butter.
  5. Serve immediately, garnished with additional chopped parsley and a sprinkle of smoked paprika if desired.
