Preparation Steps
- If using fresh corn, grill or sauté the corn for 5-7 minutes until charred. Let cool.
- Chop cucumbers into half-moons, and dice the red bell pepper and red onion. Chop cilantro.
- Whisk together mayonnaise and sour cream (or Greek yogurt) with lime juice, chili powder, smoked paprika, salt, and pepper until smooth.
- In a large bowl, combine cooled corn, cucumbers, bell pepper, red onion, and cilantro. Fold together gently.
- Drizzle the dressing over the salad, and toss until coated. Add cotija cheese and fold gently before serving.
