  • 2 cups Corn Kernels fresh, canned, or frozen
  • 2 cups Cucumbers seedless or English, sliced
  • 1 medium Red Bell Pepper diced
  • 1 small Red Onion finely diced
  • 1/4 cup Fresh Cilantro chopped
For the Creamy Dressing
  • 1/2 cup Cotija Cheese crumbled
  • 1/2 cup Mayonnaise light mayo optional
  • 1/2 cup Sour Cream or Greek Yogurt Greek yogurt is lighter
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Preparation Steps
  1. If using fresh corn, grill or sauté the corn for 5-7 minutes until charred. Let cool.
  2. Chop cucumbers into half-moons, and dice the red bell pepper and red onion. Chop cilantro.
  3. Whisk together mayonnaise and sour cream (or Greek yogurt) with lime juice, chili powder, smoked paprika, salt, and pepper until smooth.
  4. In a large bowl, combine cooled corn, cucumbers, bell pepper, red onion, and cilantro. Fold together gently.
  5. Drizzle the dressing over the salad, and toss until coated. Add cotija cheese and fold gently before serving.
