Cooking Steps
  1. Boil water in a large pot and cook rice noodles according to package instructions (about 4-6 minutes).
  2. Drain noodles and toss with a splash of oil.
  3. In a skillet, heat oil and sauté garlic for 30 seconds, then add mixed vegetables and stir-fry for 2-3 minutes.
  4. Push vegetables aside, add shrimp, Szechuan peppercorns, and chili oil; cook shrimp for 3-4 minutes until pink.
  5. Mix soy sauce, rice vinegar, brown sugar, and chili oil in a bowl; pour over cooked shrimp and vegetables.
  6. Add cooked noodles to the skillet, tossing everything together to coat in sauce, then cook for 2 more minutes.
