Step-by-Step Instructions
  1. In a large skillet over medium-high heat, add the spicy Italian sausage. Cook for 5–10 minutes, breaking it apart until fully cooked.
  2. If there’s excess grease, carefully drain most of it, leaving a tablespoon.
  3. Add the diced red onion and bell pepper to the skillet, stirring them in well. Cook for about 5 minutes.
  4. Stir in the brown rice, white beans, canned diced tomatoes, dried Italian herbs, garlic powder, sea salt, red pepper flakes, and enough water to cover everything.
  5. Reduce the heat to medium, cover the skillet, and let it simmer for 40 minutes, stirring every 10 minutes.
  6. Once the rice is tender and the liquid is absorbed, gently fold in the fresh spinach.
  7. Remove the skillet from heat and let it sit for a few minutes before serving.
