- Preheat your oven to 375°F (190°C).
- Whisk together the all-purpose flour, baking soda, and salt in a medium bowl.
- Beat the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the vanilla extract and then the eggs, one at a time.
- Gradually add the dry mixture to the wet mixture on low speed until just combined.
- Fold in the milk chocolate chips, semi-sweet chocolate chips, and 1 cup of mini marshmallows.
- Line a sheet pan with parchment paper and lay out the graham crackers in a single layer.
- Spread the cookie dough over the graham crackers, leaving space for rising.
- Bake for 5 minutes.
- Sprinkle the Hershey bar pieces and remaining marshmallows on top and bake for an additional 5-7 minutes.
- Allow to cool in the pan for at least 15 minutes before slicing.
- Lift the bars from the pan using the parchment paper and slice into squares.
