  • 1 head Cauliflower fresh or frozen
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth chicken broth works well as a substitute
  • 2 tablespoons Olive Oil can be swapped with butter

Method
 

Steps
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking for about 5 minutes until translucent.
  2. Chop cauliflower into small florets, add to the pot, and sauté for another 3–4 minutes until it starts to soften.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15–20 minutes until fork-tender.
  4. Blend the soup with an immersion blender until smooth, or carefully transfer in batches to a standard blender.
  5. Return blended soup to the pot, stir in salt and pepper to taste, and serve hot garnished with parsley.
