- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking for about 5 minutes until translucent.
- Chop cauliflower into small florets, add to the pot, and sauté for another 3–4 minutes until it starts to soften.

- Blend the soup with an immersion blender until smooth, or carefully transfer in batches to a standard blender.
