Step-by-Step Instructions
  1. In a large pot, combine 4 cups of chicken broth, 2 smashed stalks of lemongrass, 4 kaffir lime leaves, and 1 tablespoon of sliced fresh ginger. Bring to a gentle simmer over medium heat for 5–7 minutes.
  2. Pour in 1 can of coconut milk and add 1 cup of sliced mushrooms, 2 tablespoons of fish sauce, 1 tablespoon of brown sugar, and 2-3 sliced Thai chilies. Stir and let it simmer for an additional 5 minutes.
  3. Carefully introduce 1 pound of medium shrimp to the pot. Cook for about 3–4 minutes until shrimp turn pink and opaque.
  4. Stir in 1 tablespoon of fresh lime juice. Adjust seasoning as needed.
  5. Remove lemongrass stalks and lime leaves. Ladle into bowls and garnish with fresh cilantro and green onions.
