  • 2 pounds Beef Roast (Chuck) Cubed for tenderness after slow cooking
For the Sauce
  • 1/2 cup Soy Sauce Substitute with gluten-free soy sauce if necessary
  • 1/4 cup Brown Sugar Can be reduced for less sweetness
  • 1/4 cup Mirin Optional sweet cooking wine
  • 2 tablespoons Honey Maple syrup can be a substitute
  • 1 medium Pear (or Apple) Grated

  • 4 cloves Garlic Minced or grated
  • 1 tablespoon Ginger Fresh preferred
  • 1 tablespoon Rice Vinegar Can use white vinegar as a substitute
  • 1 tablespoon Gochujang Adjust quantity or omit for less heat
  • 1/4 teaspoon Black Pepper Can be omitted
  • 2 tablespoons Cornstarch Optional for thickening the sauce
  • 2 tablespoons Toasted Sesame Oil Do not substitute
For Garnish
  • 1 tablespoon Toasted Sesame Seeds Optional garnish
  • 2 green onions Green Onions Sliced

Preparation
  1. Cube a budget-friendly beef roast and pat dry with paper towels. Place beef cubes in your slow cooker evenly.
  2. In a medium bowl, whisk together soy sauce, brown sugar, mirin, honey, grated pear, chopped onion, minced garlic, and grated ginger.
  3. Pour the sauce over the cubed beef and gently stir to combine, then close the lid of the slow cooker.
  4. Cook on low for 8 hours or high for 4 to 6 hours, checking for doneness.
  5. Stir in toasted sesame oil, taste and adjust seasoning, then sprinkle with sesame seeds and sliced green onions.
  6. Serve over rice or a grain of your choice.
