- Preheat your oven to 400°F (200°C).
- Rinse the mushrooms under cold water and pat them dry with a paper towel. Toss them in a mixing bowl with olive oil.
- Add the balsamic vinegar, soy sauce, minced garlic, fresh thyme, salt, and pepper, and toss until coated.
- Spread the mushrooms in a single layer on the baking sheet.
- Roast in the oven for approximately 20 minutes, stirring halfway through.
- Remove from the oven, let cool briefly, and transfer to a serving dish, drizzling any remaining sauce over.
