For the Marinade
  • 1 tablespoon oil olive oil or avocado oil as substitutes
  • 3 tablespoons balsamic vinegar consider using a sugar-free option for keto
  • 2 tablespoons soy sauce tamari for gluten-free or coconut aminos for less sodium
  • 3 cloves garlic chopped, fresh garlic is best
  • 1/2 teaspoon thyme fresh or 1/4 teaspoon dried; rosemary is a great substitute
  • Salt and Pepper to taste

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine 1 tablespoon of oil, 3 tablespoons of balsamic vinegar, and 2 tablespoons of soy sauce. Add in 3 chopped garlic cloves, 1/2 teaspoon of thyme, salt, and pepper to taste. Whisk until well-blended.
  3. Add 2 pounds of cleaned and dried mushrooms to the mixing bowl with the marinade. Toss gently to ensure mushrooms are coated.
  4. Spread the marinated mushrooms in a single layer on a large baking pan.
  5. Place the baking pan in the preheated oven and roast for about 20 minutes, stirring halfway through.
  6. Once roasted, transfer the mushrooms to a serving dish and enjoy warm.
