Step-by-Step Instructions
  1. Heat the avocado oil in a large skillet over medium-high heat until shimmering.
  2. Add the cubed potatoes, sauté for 5-6 minutes until golden brown and slightly softened.
  3. Push potatoes to the side and add ground beef, breaking it up. Brown for about 5 minutes.
  4. Add diced onion and bell pepper, season with salt and pepper, and cook for 3-4 minutes.
  5. Stir in diced green chiles, chili powder, cumin, and smoked paprika, cooking for 1-2 minutes.
  6. Fold in cooked potatoes and cilantro. Cook for 6-8 minutes, stirring occasionally.
  7. Sprinkle shredded cheese over the skillet, cover, and cook for an additional minute until melted.
