  • 2 1/2 teaspoons Chili Powder Adjust to taste.
  • 1 teaspoon Ground Cumin Can be omitted if necessary.
  • 1/2 teaspoon Smoked Paprika Regular paprika can be used.

  • 1/2 cup Shredded Cheese Monterey Jack or Cheddar are great options.

Step-by-Step Instructions
  1. Preheat 2 tablespoons of avocado oil in a large skillet over medium-high heat until shimmery, about 1-2 minutes.
  2. Add cubed potatoes and sauté for approximately 6 minutes until golden brown and fork-tender.
  3. Move potatoes to one side and add ground beef, onion, and red bell pepper to the empty side. Cook for about 5-7 minutes, breaking apart beef until browned.
  4. Stir in diced green chiles, chili powder, ground cumin, and smoked paprika. Cook for an additional 6-8 minutes.
  5. Top with shredded cheese, cover with a lid, and let sit for 2-3 minutes until cheese melts.
  6. Garnish with fresh cilantro and serve warm, alongside tortillas or over rice.
