Instructions
  1. In a large skillet, melt 2 tablespoons of unsalted butter along with 1 teaspoon of olive oil over medium-low heat. Add 2 medium thinly sliced yellow onions and a pinch of salt. Cook these slowly for 25-30 minutes until the onions become golden and jammy. Set aside.
  2. In a small bowl, combine ½ cup of mayonnaise, 2 tablespoons of ketchup, 1 tablespoon of yellow mustard, and 1 tablespoon of finely diced pickles. Stir in ½ teaspoon of smoked paprika and 1 teaspoon of garlic powder. Blend well.
  3. In a mixing bowl, combine 1 pound of ground beef with 1 teaspoon of Worcestershire sauce, 1 teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of smoked paprika. Season generously with salt and pepper. Shape into four thin patties.
  4. Heat your skillet over medium-high heat and add a splash of oil if necessary. Cook the patties for about 3-4 minutes on each side until browned and cooked through. Set aside to rest.
  5. Butter one side of each bread slice with 1 tablespoon of unsalted butter. On the unbuttered side, layer 2 slices of Swiss cheese, a beef patty, caramelized onions, another slice of cheese, and top with another slice of bread, buttered side out.
  6. Place the assembled sandwiches on your skillet over medium heat. Cook for approximately 3-4 minutes on each side, pressing gently with a spatula until golden and crispy. Serve hot.
  7. Slice the sandwiches in half to reveal the delicious layers. Serve your Patty Melts hot alongside the reserve of secret sauce for dipping.
