- In a large skillet, melt 2 tablespoons of unsalted butter along with 1 teaspoon of olive oil over medium-low heat. Add 2 medium thinly sliced yellow onions and a pinch of salt. Cook these slowly for 25-30 minutes until the onions become golden and jammy. Set aside.
- In a small bowl, combine ½ cup of mayonnaise, 2 tablespoons of ketchup, 1 tablespoon of yellow mustard, and 1 tablespoon of finely diced pickles. Stir in ½ teaspoon of smoked paprika and 1 teaspoon of garlic powder. Blend well.
- In a mixing bowl, combine 1 pound of ground beef with 1 teaspoon of Worcestershire sauce, 1 teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of smoked paprika. Season generously with salt and pepper. Shape into four thin patties.
- Heat your skillet over medium-high heat and add a splash of oil if necessary. Cook the patties for about 3-4 minutes on each side until browned and cooked through. Set aside to rest.
- Butter one side of each bread slice with 1 tablespoon of unsalted butter. On the unbuttered side, layer 2 slices of Swiss cheese, a beef patty, caramelized onions, another slice of cheese, and top with another slice of bread, buttered side out.
- Place the assembled sandwiches on your skillet over medium heat. Cook for approximately 3-4 minutes on each side, pressing gently with a spatula until golden and crispy. Serve hot.
