- In a small bowl, combine salt, onion powder, black pepper, dried oregano, smoked paprika, and garlic powder. Mix well.
- Wash and slice the potatoes into thin rounds. Pat dry thoroughly. Coat with olive oil and half of the spice mix. Spread on a baking tray.
- Preheat oven to 200°C (390°F). Bake the chips for 30–40 minutes, flipping halfway through.
- Heat olive oil in a frying pan. Add beef mince and remaining spice mix. Cook until browned.
- In a bowl, combine mayonnaise, ketchup, Dijon mustard, and pickle juice. Mix until smooth.
- Assemble the bowls: Start with chips, then layer beef, shredded lettuce, cheese, pickles, and drizzle with sauce.
