Preparation Steps
  1. In a large mixing bowl, whisk together the dough ingredients: 4 cups all-purpose flour, 1/2 cup granulated sugar, 1 teaspoon salt, and 2 teaspoons yeast.
  2. In another bowl, combine 1 cup warm milk, 1/4 cup melted butter, 1 egg, 2 tablespoons red food coloring, and 1/4 cup cocoa powder. Mix the wet and dry ingredients until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover, and let it rise for 1 to 1.5 hours until doubled in size.
  5. In a medium bowl, mix together the filling ingredients: 1/2 cup softened butter, 1/2 cup brown sugar, 2 tablespoons cocoa powder, 2 tablespoons ground cinnamon, and a pinch of nutmeg until smooth.
  6. Punch down the risen dough and roll it into a rectangle measuring 12x18 inches. Spread the filling mixture over, leaving a half-inch border.
  7. Starting from the long edge, tightly roll the dough into a log, slice into 12 equal pieces, and place in a greased baking pan.
  8. Cover and let the rolls rise again for 30-45 minutes.
  9. Preheat the oven to 350°F. Bake the rolls for 25-30 minutes or until golden brown.
