- Slice the chicken into 1-inch strips and slice the bell peppers and onion. Mince the garlic.
- In the slow cooker, spread half of the salsa at the bottom.
- Layer half of the sliced bell peppers and diced onion next, then sprinkle minced garlic.
- Place the sliced chicken strips over the vegetable layer.
- Sprinkle fajita seasoning and chili powder over the chicken.
- Add the remaining salsa on top of chicken, followed by the rest of the bell peppers and onions.
- Squeeze lime juice over the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot using two forks.
