Step-by-Step Instructions
  1. Slice the chicken into 1-inch strips and slice the bell peppers and onion. Mince the garlic.
  2. In the slow cooker, spread half of the salsa at the bottom.
  3. Layer half of the sliced bell peppers and diced onion next, then sprinkle minced garlic.
  4. Place the sliced chicken strips over the vegetable layer.
  5. Sprinkle fajita seasoning and chili powder over the chicken.
  6. Add the remaining salsa on top of chicken, followed by the rest of the bell peppers and onions.
  7. Squeeze lime juice over the mixture.
  8. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  9. Once cooked, shred the chicken in the crockpot using two forks.
