Ingredients
  

For the Dough
  • 4 cups All-purpose flour
  • 1 cup Milk Warm, can use non-dairy milk
  • 2 tablespoons Sugar For activating yeast
  • 2 teaspoons Yeast Fresh
  • 1 teaspoon Salt
  • 2 large Eggs Beaten, can substitute with flaxseed
  • 1/4 cup Butter Softened, can use plant-based butter
For the Filling
  • 1 cup Toasted shredded coconut Can substitute with chopped nuts
  • 1/2 cup Brown sugar
  • 1 teaspoon Cinnamon Optional
  • 1/4 cup Butter Softened
For the Toffee Sauce
  • 1/2 cup Heavy cream Can use coconut cream
  • 1/4 cup Butter
  • 1/2 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • Pinch Salt
For the Glaze
  • 1 cup Powdered sugar Can use coconut sugar
  • 2-3 tablespoons Milk
  • 1 teaspoon Vanilla extract
For Garnishing
  • Additional Toasted coconut flakes For garnish

Method
 

Steps
  1. In a small bowl, mix warm milk with sugar and yeast. Let sit for 5-10 minutes until frothy.
  2. In a mixing bowl, combine flour and salt. Add the yeast mixture, eggs, and butter; mix to form a rough dough.
  3. Knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
  4. Mix coconut, brown sugar, cinnamon, and butter in a bowl for the filling.
  5. After the first rise, punch down the dough and roll it out into a rectangle; spread the filling and roll into a log.
  6. Slice the log into 12 pieces and arrange in a greased baking dish. Let rise for 30 minutes.
  7. Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden.
  8. For the toffee sauce, combine cream, butter, brown sugar, vanilla, and salt in a saucepan over medium heat until thickened.
  9. For the glaze, mix powdered sugar, milk, and vanilla until smooth.
  10. Drizzle warm toffee sauce and glaze over the rolls before serving.
