Preparation
- Bring the turkey to room temperature for about 1 hour.
- Preheat your oven to 325°F (160°C). Pat the turkey dry with paper towels, season the cavity with salt and pepper, and stuff it with quartered onion, lemon, and herbs.
- Mix together ¾ cup of room temperature unsalted butter, minced garlic, salt, and pepper in a bowl to create the herb butter.
- Loosen the skin of the turkey and rub one-third of the herb butter beneath the skin. Massage the remaining herb butter over the turkey exterior.
- Place the seasoned turkey in a roasting pan, optionally on a rack or a bed of chopped vegetables.
- Roast the turkey in the oven for approximately 15 minutes per pound, aiming for an internal temperature of 158°F to 160°F.
- Once the desired temperature is reached, remove the turkey from the oven and rest for at least 30 minutes before carving.
