Ingredients
  

Turkey and Seasoning
  • 1 whole Turkey (12 to 18 pounds) Fully thawed
  • 1 whole Onion, quartered Shallots are a great alternative

  • 1-2 sprigs Fresh Rosemary Dried rosemary can be used
  • 1-2 sprigs Fresh Thyme Dried thyme can substitute
  • 1-2 sprigs Fresh Sage Highly recommended
  • Kosher Salt Sea salt can be used as an alternative
  • Black Pepper
Herb Butter
  • ¾ cup Unsalted Butter, room temperature Dairy-free alternatives can be used
  • 6 cloves Garlic, minced Garlic powder can be used sparingly

  • Fresh Vegetables (e.g., onions, celery, carrots) Choose favorite root vegetables

Method
 

Preparation
  1. Bring the turkey to room temperature for about 1 hour.
  2. Preheat your oven to 325°F (160°C). Pat the turkey dry with paper towels, season the cavity with salt and pepper, and stuff it with quartered onion, lemon, and herbs.
  3. Mix together ¾ cup of room temperature unsalted butter, minced garlic, salt, and pepper in a bowl to create the herb butter.
  4. Loosen the skin of the turkey and rub one-third of the herb butter beneath the skin. Massage the remaining herb butter over the turkey exterior.
  5. Place the seasoned turkey in a roasting pan, optionally on a rack or a bed of chopped vegetables.
  6. Roast the turkey in the oven for approximately 15 minutes per pound, aiming for an internal temperature of 158°F to 160°F.
  7. Once the desired temperature is reached, remove the turkey from the oven and rest for at least 30 minutes before carving.
