Method
 

Step‑by‑Step Instructions
  1. Trim any excess fat from the chicken thighs and pat dry with paper towels.
  2. In a medium bowl, combine olive oil, lemon zest, lemon juice, garlic, and the spices. Whisk until smooth.
  3. Coat the chicken thighs and sliced onion with the marinade. Let sit for at least 15 minutes.
  4. Preheat the oven to 425°F (or air fryer to 375°F).
  5. Lightly oil a baking sheet and arrange chicken and onions. Bake for about 30 minutes until internal temperature reaches 165°F.
  6. Optional: Broil for an additional 3-5 minutes for extra char. Keep a close eye on it.
  7. Allow to rest for 5 minutes, then slice and serve with fresh toppings in pita or as a platter.
