Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved baby potatoes with olive oil, smoked paprika, garlic powder, salt, and black pepper.
  3. Arrange the seasoned potatoes cut-side down on the baking sheet and roast for 20 minutes.
  4. Flip each potato half and roast for an additional 5 minutes for extra crispiness.
  5. Scoop out a tiny well in each potato half for the toppings.
  6. Add a generous amount of cheddar cheese into each well and bake for 2-3 minutes until melted.
  7. Top with sour cream, green onions, bacon bits, and jalapeño slices, and serve immediately.
