Steps
  1. Layer the Chicken: Place the boneless, skinless chicken breasts in a single layer at the bottom of your slow cooker.
  2. Add the Vegetables: Scatter the halved baby potatoes, followed by thinly sliced onions and freshly minced garlic over the chicken.
  3. Prepare the Flavorful Sauce: In a separate bowl, whisk together olive oil, chicken broth, Italian seasoning, salt, black pepper, paprika, thyme, and red pepper flakes. Pour it evenly over the layered chicken and vegetables.
  4. Set the Slow Cooker: Cover the slow cooker and set it to cook on low for 6-7 hours or on high for 3-4 hours.
