Baking Instructions

  3. Gradually add sugar, mixing until light and fluffy, about 2-3 minutes.
  4. Add eggs one at a time, mixing well after each addition. Then add vanilla extract and optional orange zest.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate into wet mixture, mixing gently.
  6. Fold in fresh cranberries carefully.
  7. Pour batter into the prepared loaf pan, smoothing the top.
  8. Bake for about 1 hour, checking for doneness with a toothpick.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring to a cooling rack.
