  • 1 large Madeira cake or Pound cake cut into 2 cm cubes
For the Jelly
  • 2 tablespoons gelatine powder
  • 2 cups cranberry juice preferably high-quality with added sugar
  • 1/4 cup fruit-flavored liquor (e.g., Cointreau) substitute with juice if preferred
For the Custard
  • 2 cups milk full fat or low-fat
  • 1/4 cup cornflour no substitutes recommended
  • 4 large egg yolks save leftover egg whites for other recipes
  • 1/2 cup white sugar caster sugar can be used
  • 1 teaspoon vanilla extract or vanilla bean paste
For the Topping
  • 1 cup heavy/thickened cream whipped
  • 2 tablespoons white sugar adjust to taste
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries

Method
 

Layering Steps
  1. Prepare the cake base by layering cubed Madeira or Pound cake in a trifle dish and soak with liquor or juice.
  2. Make the jelly by mixing gelatine with cranberry juice, heating half, then combining until dissolved and pour over cake.
  3. Layer custard made with milk, egg yolks, sugar, and cornflour over the set jelly; refrigerate until firm.
  4. Add a second jelly layer, topping with fresh fruits, and refrigerate to set layers.
  5. Finish by whipping cream with sugar and vanilla, then spreading it over the trifle; garnish with fruit and icing sugar.
