- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, cooking for about 5-7 minutes until tender.
- Push vegetables to one side and add seasoned flank steak to the other side. Sauté for 3-5 minutes until browned.
- Slice the French bread loaf lengthwise and scoop out some of the soft bread from the middle.
- In a bowl, mix the cooked steak and vegetables with shredded provolone cheese. Stuff the mixture into the hollowed-out bread.
- Transfer the stuffed loaf to a baking sheet and bake for approximately 15-20 minutes, until golden-brown.
- Remove from the oven and let it rest for about 5 minutes before slicing.
