  • 1 tsp Cumin adjust to taste
  • 1 tbsp Chili Powder increase for more heat

  • 8 Corn Tortillas Flour tortillas can be used as an alternative
For the Cheese
  • 1 cup Cheddar Cheese sharp variety preferred
  • 1 cup Monterey Jack for melting
For the Sauce
  • 2 cups Enchilada Sauce mild or hot depending on preference

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. In a large skillet, cook ground beef over medium heat for 7-10 minutes until fully browned. Drain excess fat.
  3. Reduce heat to low, stir in cumin and chili powder, and cook for an additional 2-3 minutes.
  4. Warm corn tortillas in the microwave for 20-30 seconds to make them pliable.
  5. On each tortilla, spoon a generous amount of seasoned beef, sprinkle cheese, then roll tightly and place in a baking dish.
  6. Pour enchilada sauce evenly over rolled enchiladas and sprinkle additional cheese on top.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5 minutes until cheese is golden.
  8. Allow to cool for a few minutes, then serve with your favorite toppings.
