Step-by-Step Instructions
  1. In a large bowl, toss together the large shrimp, jerk seasoning, olive oil, lime juice, salt, and pepper. Let the mixture rest for at least 15 minutes at room temperature.
  2. Soak the wooden skewers in water for at least 30 minutes. Once soaked, thread the marinated shrimp and fresh pineapple chunks onto the skewers, alternating between the two.
  3. Preheat your grill to medium-high heat, around 375°F to 400°F.
  4. Once your grill reaches the right temperature, gently place the skewers on the grates. Cook for 2-3 minutes on each side, or until the shrimp turns opaque and shows a nice golden char.
  5. After grilling, carefully remove the skewers from the grill and let them rest for a minute. Serve hot off the grill.
