- In a large bowl, toss together the large shrimp, jerk seasoning, olive oil, lime juice, salt, and pepper. Let the mixture rest for at least 15 minutes at room temperature.
- Soak the wooden skewers in water for at least 30 minutes. Once soaked, thread the marinated shrimp and fresh pineapple chunks onto the skewers, alternating between the two.
- Preheat your grill to medium-high heat, around 375°F to 400°F.
- Once your grill reaches the right temperature, gently place the skewers on the grates. Cook for 2-3 minutes on each side, or until the shrimp turns opaque and shows a nice golden char.
- After grilling, carefully remove the skewers from the grill and let them rest for a minute. Serve hot off the grill.
