- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Thaw and pat dry your fish fillets, then cut them into sticks, about 1-inch wide and 3-4 inches long.
- Create a breading station with three dishes: combine flour, salt, pepper, garlic powder, onion powder, and smoked paprika in the first. In the second, whisk eggs and milk or water. In the third, place Panko breadcrumbs.
- Dredge each fish stick in the flour mixture, dip it in the egg wash, then roll it in Panko breadcrumbs. Place on the baking sheet.
- Drizzle olive oil over the fish sticks, then bake for 12-18 minutes, flipping halfway, until crispy and golden brown.
- For the tartar sauce, combine pickles, capers, mayonnaise, lemon juice, herbs, mustard, salt, and pepper in a bowl. Mix well.
- Chill the tartar sauce in the refrigerator for 15-20 minutes before serving with the fish sticks.
