Ingredients
  

For the Fish Sticks
  • 1.5 lbs white fish fillets cod, haddock, or tilapia
  • 1 cup all-purpose flour gluten-free flour works too!
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper consider cayenne for extra kick
  • 1 teaspoon garlic powder or fresh garlic
  • 1 teaspoon onion powder or fresh minced onion
  • 0.5 teaspoon smoked paprika optional, regular paprika can substitute
  • 2 large eggs flaxseed mixture for vegan option
  • 2 tablespoons milk or water almond milk is a substitute
  • 2 cups Panko breadcrumbs regular breadcrumbs can give a softer texture
  • 2-3 tablespoons olive oil or cooking spray coconut oil can also work
For the Tartar Sauce
  • 1 cup mayonnaise Greek yogurt offers a lighter version
  • 0.5 cup finely chopped dill pickles or sweet pickle relish gherkin variation
  • 2 tablespoons capers drained and finely chopped
  • 1 tablespoon fresh lemon juice lime juice is an alternative
  • 1 tablespoon finely chopped fresh dill or parsley other herbs can be mixed in
  • 1 teaspoon Dijon mustard optional
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper or to taste

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thaw and pat dry your fish fillets, then cut them into sticks, about 1-inch wide and 3-4 inches long.
  3. Create a breading station with three dishes: combine flour, salt, pepper, garlic powder, onion powder, and smoked paprika in the first. In the second, whisk eggs and milk or water. In the third, place Panko breadcrumbs.
  4. Dredge each fish stick in the flour mixture, dip it in the egg wash, then roll it in Panko breadcrumbs. Place on the baking sheet.
  5. Drizzle olive oil over the fish sticks, then bake for 12-18 minutes, flipping halfway, until crispy and golden brown.
  6. For the tartar sauce, combine pickles, capers, mayonnaise, lemon juice, herbs, mustard, salt, and pepper in a bowl. Mix well.
  7. Chill the tartar sauce in the refrigerator for 15-20 minutes before serving with the fish sticks.

Notes
