- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- Mash 3 ripe bananas in a large mixing bowl, then whisk in 2 large eggs, 1 cup of brown sugar, ½ cup of vegetable oil or melted unsalted butter, ¼ cup of molasses, and 1 teaspoon of vanilla extract until well combined.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, ¼ teaspoon of salt, 1 teaspoon of ground ginger, 1 teaspoon of cinnamon, ½ teaspoon of nutmeg, and ¼ teaspoon of cloves.
- Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- If desired, fold in ½ cup of chopped walnuts or pecans and ¼ cup of chopped crystallized ginger.
- Pour the batter into the prepared loaf pan and level the top.
- Bake in the preheated oven for 50-55 minutes, checking for doneness with a toothpick.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
