Ingredients

For the Beef Mixture
  • 1 lb Ground Beef Feel free to swap with lean ground turkey for a lighter option.
  • 1 medium Onion Adds sweetness; shallots can be used as a substitute.
  • 1 packet Taco Seasoning Make your own with chili powder, cumin, garlic powder, and paprika.
  • 1/2 cup Water Helps deglaze the pan.
For the Cabbage Base
  • 4 cups Cabbage Green cabbage holds up well; coleslaw mix is a shortcut.
  • 1 cup Corn Canned or frozen corn works great.
For the Creamy Finish
  • 1-2 cups Shredded Cheese Cheddar is traditional; dairy-free cheese is an excellent substitute.
  • 1 bag Fritos Use a whole bag for simplicity, or consider crushed tortilla chips.

Equipment

  • large skillet

Method

Step-by-Step Instructions
  1. In a large skillet over medium heat, add the ground beef and diced onion. Cook for about 5–7 minutes until browned and cooked through.
  2. Stir in the taco seasoning and water, mixing thoroughly. Let simmer for 3–4 minutes until the sauce thickens.
  3. Fold in the shredded cabbage and corn into the beef mixture, cooking for an additional 8–10 minutes until the cabbage is slightly wilted.
  4. Sprinkle the shredded cheese over the mixture, cover, and cook for 2–3 minutes until the cheese melts.
  5. Remove from heat and stir in half a bag of Fritos, reserving the rest for topping.
  6. Scoop portions onto plates and top with the remaining Fritos, serving immediately.
