  • 1 can French onion soup or homemade French onion broth
  • 10.5 oz condensed beef broth reduced-sodium options available
  • 1 cup reduced-sodium beef broth
  • 1 cup white or brown rice brown rice may require longer cook time
For the Protein
  • 1 lb ground beef can substitute with ground turkey
  • 2 tbsp butter olive oil can be used as an alternative
For the Flavor
  • 1 medium onion can swap with shallots
  • 8 oz mushrooms omit or replace with bell peppers if desired
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp dried thyme or fresh thyme
  • 2 tbsp soy sauce optional
  • 1 tbsp Worcestershire sauce optional
For the Finish
  • 2 cups mozzarella cheese or Swiss or cheddar
  • 1 cup fried onions or replace with breadcrumbs or crushed chips

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C). Grease a 9×13” baking dish.
  2. Combine French onion soup, condensed beef broth, and reduced-sodium beef broth in the baking dish. Stir in the rice.
  3. Slice butter into thin pats and distribute over the rice mixture.
  4. Cover with foil and bake for 30 minutes.
  5. Sauté diced onions in a skillet over medium heat for about 5 minutes.
  6. Add ground beef to cooked onions, season with garlic powder and black pepper, and cook until browned, about 7–10 minutes.
  7. Stir in sliced mushrooms and thyme, cooking for another 3–4 minutes.
  8. Combine beef mixture into the rice casserole after the initial baking time.
  9. Remove foil and bake uncovered for an additional 25 minutes.
  10. Sprinkle mozzarella cheese and fried onions on top and return to the oven for another 5–7 minutes.
