Preparation Steps
- Preheat your oven to 425°F (220°C). Grease a 9×13” baking dish.
- Combine French onion soup, condensed beef broth, and reduced-sodium beef broth in the baking dish. Stir in the rice.
- Slice butter into thin pats and distribute over the rice mixture.
- Cover with foil and bake for 30 minutes.
- Sauté diced onions in a skillet over medium heat for about 5 minutes.
- Add ground beef to cooked onions, season with garlic powder and black pepper, and cook until browned, about 7–10 minutes.
- Stir in sliced mushrooms and thyme, cooking for another 3–4 minutes.
- Combine beef mixture into the rice casserole after the initial baking time.
- Remove foil and bake uncovered for an additional 25 minutes.
- Sprinkle mozzarella cheese and fried onions on top and return to the oven for another 5–7 minutes.
