Ingredients
  

For the Cupcakes
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Butter softened
  • 3 Egg Whites room temperature
  • 1 1/2 cups All-Purpose Flour or gluten-free flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract pure
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/2 cup Milk (2%) or plant-based milk
  • 1/2 cup Funfetti Sprinkles
For the Frosting
  • 1/2 cup Unsalted Butter softened
  • 2 cups Powdered Sugar adjust to taste
  • 1 tsp Vanilla Extract for frosting
  • 1/4 cup Whipping Cream or heavy cream

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin pan with colorful muffin papers.
  2. In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy, about 3–4 minutes.
  3. Gradually add egg whites, mixing on low speed until fully incorporated.
  4. Sift together flour, baking soda, salt, and baking powder in a separate bowl.
  5. Whisk together vanilla extract, sour cream, and milk in another bowl.
  6. Alternately add the dry ingredients and wet ingredients to the butter mixture, mixing gently just until combined.
  7. Gently fold in the Funfetti sprinkles.
  8. Scoop the batter into the muffin cups, filling each about two-thirds full.
  9. Bake for 18 minutes or until a toothpick inserted comes out clean.
  10. Cool for 5 minutes in the pan then transfer to a wire rack to cool completely.
  11. Beat softened butter on high, gradually adding powdered sugar until fluffy. Mix in vanilla and whipping cream.
  12. Pipe frosting on cooled cupcakes and decorate with extra sprinkles.
