Baking Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with colorful muffin papers.
- In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy, about 3–4 minutes.
- Gradually add egg whites, mixing on low speed until fully incorporated.
- Sift together flour, baking soda, salt, and baking powder in a separate bowl.
- Whisk together vanilla extract, sour cream, and milk in another bowl.
- Alternately add the dry ingredients and wet ingredients to the butter mixture, mixing gently just until combined.
- Gently fold in the Funfetti sprinkles.
- Scoop the batter into the muffin cups, filling each about two-thirds full.
- Bake for 18 minutes or until a toothpick inserted comes out clean.
- Cool for 5 minutes in the pan then transfer to a wire rack to cool completely.
- Beat softened butter on high, gradually adding powdered sugar until fluffy. Mix in vanilla and whipping cream.
- Pipe frosting on cooled cupcakes and decorate with extra sprinkles.
