Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare your baking sheet.

  3. Spread sweet potatoes on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, stirring halfway through.
  5. In a medium bowl, combine black beans, corn, cherry tomatoes, red onion, and cilantro. Drizzle lime juice and mix.
  6. Allow roasted sweet potatoes to cool slightly before handling.
