Method
 

Waffle Preparation
  1. In a large mixing bowl, whisk together 2 cups of flour, 1 cup of sugar, 1 tbsp of baking powder, and 1 tsp of salt.
  2. In a separate bowl, combine 2 large eggs, 1.75 cups of milk, 0.5 cup of vegetable oil, and 1 tsp of vanilla extract.
  3. Slowly mix wet ingredients into dry until just combined, leaving the batter slightly lumpy.
  4. Divide the batter into two bowls. Mix 3 tbsp of cocoa powder and 1 tbsp of red food coloring into one bowl.
  5. Preheat waffle iron according to manufacturer's instructions for about 5 minutes.
  6. Pour alternating portions of the vanilla and red velvet batters into the iron, gently swirl for marbling.
  7. Cook for 5-7 minutes until golden brown, ensuring waffles release easily from the plates.
  8. For glaze, heat a saucepan, whisk together 4 oz of cream cheese, 1 cup of powdered sugar, 2 tbsp of milk, and 0.5 tsp of vanilla until smooth.
  9. Serve warm waffles drizzled with cream cheese glaze, and optional fresh berries or whipped cream.
