Method
 

  1. Cook diced bacon or pancetta in a large oven-safe saucepan over medium heat for about 5-7 minutes until crispy.
  2. Season the beef chuck with salt and pepper, then sear in the same pan for 4-6 minutes on each side.
  3. Sauté diced onion, carrot, and celery in the remaining bacon grease for 7-10 minutes until softened.
  4. Stir in chopped garlic and optional red pepper flakes, sauté for 1 minute until fragrant.
  5. Pour in beef broth and crushed tomatoes, add thyme, rosemary, and Italian seasoning, then stir well.
  6. Return seared beef to the pot, ensuring it is submerged in the sauce, then choose your cooking method.
  7. Once the cooking time is up, check that the beef is fork-tender, adjust seasoning, and remove bay leaves before serving.
