- In a small bowl, whisk together soy sauce, honey, and cornstarch until smooth and fully combined. Set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp and sauté for about 2 minutes on each side until pink and opaque. Remove shrimp from skillet.
- In the same skillet, add another tablespoon of olive oil and toss in chopped broccoli, sliced bell peppers, and snow peas. Sauté for 5-6 minutes until tender-crisp.
- Stir in minced garlic and cook for about 1 minute until fragrant.
- Return cooked shrimp to the skillet, pour the prepared sauce over the mixture, and gently stir for about 10 seconds until the sauce thickens.
- Remove from heat, garnish with sliced green onions and optional sesame seeds or cilantro, and serve hot.
