  • 1 tbsp baking powder
  • 3/4 cup plant-based milk unsweetened
  • 1/2 cup apple sauce can substitute with oil

  • 1 tbsp cinnamon
  • 2 tbsp extra coconut sugar adjust according to taste

  • 1 tsp vanilla extract almond extract can be used

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather all your ingredients and equipment.
  2. In a large mixing bowl, combine sprouted spelt flour, baking powder, and coconut sugar. Whisk together until blended.
  3. In a separate bowl, whisk together plant-based milk, apple sauce (or oil), and optional vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until a cohesive dough forms.
  5. Dust a clean surface with flour and roll out the dough into a rectangle about 1/4 inch thick.
  6. Mix together cinnamon and additional coconut sugar for the filling and spread evenly over the rolled dough.
  7. Roll the dough tightly into a log, then slice into 1-inch wide pieces to form individual rolls.
  8. Place the cinnamon roll slices in a greased baking dish, allowing them to touch slightly.
  9. Bake for 20–25 minutes, until lightly golden on top. Allow to cool slightly before serving.
