Preparation Steps
- Preheat your oven to 400°F (200°C). Slice the top off a medium head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- While garlic is roasting, heat remaining olive oil in a skillet over medium heat, add chopped fresh spinach, sauté for 2-3 minutes until wilted, and season with salt and pepper. Set aside.
- Once garlic has cooled, squeeze out cloves into a mixing bowl, mash until smooth, and mix in ricotta cheese, half of mozzarella, oregano, and seasoning until creamy.
- Spread garlic-ricotta mixture over pizza crust, layer with sautéed spinach, top with remaining mozzarella and crumbled feta. Sprinkle with crushed red pepper flakes if desired.
- Bake in the preheated oven for 15-20 minutes until the crust is golden and cheese is bubbling. Remove from oven and let cool for a few minutes.
- Garnish with fresh basil if desired, slice, and serve.
