  • 1 pound Ground Beef can substitute with ground turkey or chicken
  • 1 medium Onion diced, yellow or white preferred
  • 2 cloves Minced Garlic or 1/2 tsp garlic powder
  • 1 teaspoon Cumin
  • 1 tablespoon Chili Powder adjust to taste
For the Enchiladas
  • 8 pieces Tortillas corn or flour, lightly fried
  • 2 cups Enchilada Sauce store-bought or homemade
  • 2 cups Shredded Cheese cheddar, Monterey Jack, or Mexican blend

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and diced onions for 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder, cooking for another minute.
  4. Assemble the enchiladas by rolling the beef mixture in tortillas and placing them seam-side down in a greased baking dish.
  5. Drizzle enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
  6. Bake uncovered for 20-25 minutes until bubbly and cheese is golden brown.
  7. Serve hot, garnished with cilantro or jalapeños.
