  • 0.5 cups Raisins Can substitute with dried cranberries
  • 1 handful Walnuts Chopped; for nut-free, use seeds
For the Dressing
  • 3 tablespoons Olive Oil Can substitute with avocado oil
  • 1 tablespoon Lemon Juice Juice of one lemon
  • 1 tablespoon Honey Adjust quantity to taste; vegan option is agave syrup

Method
 

Make the Salad
  1. Wash and peel the carrots, then shred them using a box grater or food processor.
  2. In a large bowl, combine the shredded carrots, raisins, and walnuts. Mix well.
  3. In a separate bowl, whisk together olive oil, lemon juice, and honey. Add salt and pepper to taste.
  4. Pour the dressing over the salad mixture and toss well to coat.
