- Preheat your Blackstone griddle to medium-low heat (around 350°F). Gather all ingredients.
- Drizzle vegetable oil on the griddle, add diced chicken, and sauté for 4–6 minutes until golden brown and cooked through. Move to cooler side to keep warm.
- Add another splash of oil and toss in the frozen peas and diced carrots. Sauté for 3–5 minutes until softened.
- Pour the beaten eggs onto the griddle, scramble until fully cooked (2–3 minutes), and mix with chicken and vegetables.
- Add the cold rice, break clumps, and drizzle sesame oil and soy sauce. Season with salt and pepper to taste; sauté for 3–4 minutes.
- Remove from griddle, serve on warm plates, and garnish with sliced green onions if desired.
