Cooking Instructions
  1. Preheat your Blackstone griddle to medium-low heat (around 350°F). Gather all ingredients.
  2. Drizzle vegetable oil on the griddle, add diced chicken, and sauté for 4–6 minutes until golden brown and cooked through. Move to cooler side to keep warm.
  3. Add another splash of oil and toss in the frozen peas and diced carrots. Sauté for 3–5 minutes until softened.
  4. Pour the beaten eggs onto the griddle, scramble until fully cooked (2–3 minutes), and mix with chicken and vegetables.
  5. Add the cold rice, break clumps, and drizzle sesame oil and soy sauce. Season with salt and pepper to taste; sauté for 3–4 minutes.
  6. Remove from griddle, serve on warm plates, and garnish with sliced green onions if desired.
