Preparation
  1. Preheat your oven to 375°F (190°C). Gather all ingredients.
  2. In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese.
  3. Season chicken breasts with salt and pepper. Coat in the breadcrumb mixture.
  4. Heat a skillet over medium-high heat with olive oil. Sear chicken for 3 minutes on each side.
  5. Transfer chicken to a baking sheet and bake for 15-20 minutes until cooked through.
  6. Butter one side of each slice of sourdough bread and toast in a skillet until golden.
  7. After baking, let the chicken rest briefly before slicing. Toss romaine lettuce with Caesar dressing.
  8. Assemble the sandwich by layering dressed romaine, sliced chicken, and optionally cherry tomatoes between toasted bread.
