  • 2 lbs Beef Stew Meat can substitute with chuck roast or brisket
  • 1 lbs Baby Potatoes halved
For the Sauce
  • 1/2 cup Unsalted Butter or salted butter, adjust salt accordingly
  • 4 Garlic fresh minced
  • 2 tbls Olive Oil or vegetable oil
Seasonings
  • 1 tbls Salt kosher or sea salt
  • 1 tsp Black Pepper freshly ground
  • 1 tsp Dried Thyme or fresh herbs
  • 1 tsp Dried Rosemary or fresh herbs
  • 1 tsp Paprika mild or smoked
For Cooking
  • 1 cup Beef Broth or chicken/vegetable broth
  • Fresh Parsley optional, for garnish

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the beef stew meat with olive oil, salt, black pepper, dried thyme, dried rosemary, and paprika. Toss the beef until it’s well coated with the seasonings.
  2. Optional: Heat a skillet over medium-high heat and sear the beef cubes in batches until browned on all sides, approximately 3-4 minutes per side.
  3. Transfer the beef cubes into your crockpot, arranging them into an even layer.
  4. In the same skillet, melt the unsalted butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Pour this garlic butter mixture over the beef in the crockpot.
  5. Place the halved baby potatoes around the beef in the crockpot.
  6. Pour the beef broth over all the ingredients in the crockpot.
  7. Gently stir to combine all ingredients without crushing the potatoes.
  8. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  9. Once cooked, taste and season with salt and pepper as needed. Sprinkle fresh parsley on top before serving.
