- In a large bowl, combine the beef stew meat with olive oil, salt, black pepper, dried thyme, dried rosemary, and paprika. Toss the beef until it’s well coated with the seasonings.
- Optional: Heat a skillet over medium-high heat and sear the beef cubes in batches until browned on all sides, approximately 3-4 minutes per side.
- Transfer the beef cubes into your crockpot, arranging them into an even layer.
- In the same skillet, melt the unsalted butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Pour this garlic butter mixture over the beef in the crockpot.
- Place the halved baby potatoes around the beef in the crockpot.
- Pour the beef broth over all the ingredients in the crockpot.
- Gently stir to combine all ingredients without crushing the potatoes.
- Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, taste and season with salt and pepper as needed. Sprinkle fresh parsley on top before serving.
