Step-by-Step Instructions
  1. Season the chicken by rubbing it with the spice blend, ensuring both sides are well-coated.
  2. Add the seasoned chicken to the crockpot and pour the fire-roasted diced tomatoes with green chiles over it.
  3. Cover and cook on low for approximately 5 hours or high for about 3 hours until fork-tender.
  4. About 45 minutes before cooking is complete, slice the bell peppers and onion, and add them to the crockpot.
  5. Once finished, remove chicken and shred it before returning it to the pot with lime juice.
  6. Serve on warm flour tortillas and top with cheese, guacamole, salsa, and sour cream.
