  • 1 cup Shredded Cheddar Cheese Can substitute with mozzarella.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if needed.
  • 1 large Egg Can substitute with a flax egg.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used for stronger flavor.

For the Garlicky Yogurt Dip
  • 1 cup Plain Greek Yogurt Can swap with sour cream.
  • 2 cloves Minced Garlic
  • 1 tablespoon Fresh Lemon Juice Can substitute with vinegar.
  • 2 tablespoons Chopped Fresh Parsley Any fresh herbs can be used.

Method
 

Instructions for Yellow Squash Tots
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the yellow squash and squeeze out excess liquid using a clean kitchen towel.
  3. Combine the squeezed squash with shredded cheddar cheese, breadcrumbs, egg, garlic powder, salt, and pepper in a bowl.
  4. Shape the mixture into bite-sized tots and place them on the baking sheet.
  5. Bake the tots for 22-25 minutes, flipping halfway through to ensure even cooking.
  6. Prepare the garlicky yogurt dip by mixing Greek yogurt, minced garlic, lemon juice, and chopped parsley in a bowl.
  7. Once the tots are baked, let them cool slightly before serving with the dip.
